Chef Aidan Brooks offers an original and totally one-of-a-kind dining experience in Stoke Newington, in the London Borough of Hackney. He prides himself on showcasing the incredible produce growing here in Hackney, where Aidan was born and raised. His aim is to bring the elegance and panache of fine dining to an informal and relaxed atmosphere, with a tasting menu experienced by guests at a communal table. What makes the concept truly unique is the fact that 100% of the fruits, vegetables and herbs that he uses on his menu must have grown within Hackney. It's his golden rule, and he achieves this by maintaining very close relationships with a select group of Hackney's most sustainable small-scale organic horticultural growers. He also cultivates produce at his own private allotment, as well as foraging for tree fruits, wild herbs, flower blossoms and hedgerow berries around the Borough. Aidan's Social Dining at The Chef's Table is a communal fine dining experience that takes place every Friday evening, with a single seating beginning at 7pm. Guests are greeted with a welcome cocktail on arrival, made using spirits from the 58 & Co Distillery in Haggerston. Aidan serves a nine course tasting menu to the whole table. Filtered water is provided on the table, and other drinks are BYOB. The day before guests are due to attend, Aidan offers recommendations for two great local vintners in the area. Both have fantastic selections including low intervention and biodynamic wines to suit every budget, and can offer friendly advice on pairings. Aidan is able to accommodate a wide variety of dietary requirements including vegetarian and vegan, pescatarian, gluten free, dairy free, nut free, kosher, halal, pregnancies and teetotallers. Hi I'm Aidan, a professional chef with 12 years experience cooking in restaurants in Barcelona, Valencia and London before launching my own venture, Eleven98 in the summer of 2018. I have a huge passion for sustainable living, cooking and dining, and I bring this passion to my professional cooking, serving my guests a 9 course tasting menu based entirely on produce sourced from within the London Borough of Hackney. A super-low carbon footprint, food miles that need to be measured in yards, and a zero waste cooking philosophy are the backbone of my culinary ethos.
